Kamairi-cha is a type of tea made by pan-firing freshly harvested tea leaves. This differs from the sencha process, which halts fermentation by steaming the picked leaves and applying heat. Currently, the production of kamairi-cha accounts for less than 1% of Japan's total tea production, with the majority being produced in the mountainous regions of Kyushu, and Miyazaki Prefecture being the leading producing region.


Moreover, withering kamairicha undergoes an additional process called 'withering' before pan-firingthe leaves. This process involves wilting the leaves to enhance their aroma, allowing for a tea with a high fragrance.


Unkai cultivar was registered in Miyazaki Prefecture in 1970 specifically for Kamairi-cha. This tea possesses a rich fragrance reminiscent of jasmine.
