This organic hojicha powder is produced without the use of any pesticides or chemical fertilizers at a tea farm in the mountains of Gokase, Miyazaki Prefecture, at an altitude of 620 meters (2,000 feet). The main feature of this hojicha powder is that it is made from kamairicha green tea. Kamairicha is a type of Japanese green tea, the same as sencha. The difference is that sencha tea is harvested and then steamed to stop the fermentation of the tea leaves, while kamairicha is processed by pan-frying to stop the fermentation. Today, most Japanese teas are made by steaming tea leaves like sencha, and only a few percent are made from kamairicha tea. Although it requires a lot of time and skill, roasting brings out the natural flavor of the tea leaves and produces a fragrant tea called "kamakou or kamaka (釜香)". It also has less bitterness and astringency than sencha.
Hojicha powder is made from these fragrant and less astringent kamairicha teas, which enhances the pleasant roasty flavor of hojicha.
It can be used not only in drinks such as hojicha lattes, but also in various baking and desserts such as cakes, cookies and pudding. It is also delicious to sprinkle directly on ice cream.
