What is Hojicha ?
Hojicha (also romanized as "houjicha") is a roasted green tea. Some hojicha are roasted green tea leaves and some are roasted stems. In terms of the harvest timing, some hojicha is made from first flush green tea and some use bancha , which is harvested in the autumn. There are also various flavor differences depending on the degree of roasting of the hojicha such as :
- Toasty
- Woody
- Nutty
- Smoky

Although Hojicha is different to other Japanese teas such as Sencha and Gyokuro in color, flavor and natural elements, Hojicha also has health benefits. However Hojicha’s health benefits are slightly different to those of other Japanese teas.
Does Hojicha have caffeine?
Hojicha contains caffeine to some degree, but its amount is much lower than the caffeine amount of other Japanese teas such as gyokuro, matcha and sencha. So why is the caffeine content of hojicha so low?
How is it different from Sencha?
The biggest difference between hojicha and sencha is that Hojicha is a roasted version of sencha or bancha. Roasting means its process gives extra heat to tea leaves and reduces the amounts of catechin and caffeine.
What is Hojicha Powder?
Hojicha powder is made from hojicha tea leaves and grounding them into a fine powder in a ball mill. In appearance, Hojicha powder is different to Hojicha tea leaves, but its natural elements are basically the same.
KUKI HOJICHA
Only the kuki (stems) of first flush green tea are used to kuki hojicha. The sweetness of the stems harmonizes with the roasty flavor of the hojicha. LILIKU TEA have three types of kuki hojicha with different roasting times and temperatures. All of which have a roasty base flavor, but also have different profiles such as sweet, toasty, and woody.

Probably you have heard of the Japanese green tea powder, Matcha. Likewise, Hojicha can be also made into the form of powder. This is called Hojicha powder. While Matcha has umani flavor, Hojicha powder has a roasty flavor which you may think is similar to that of coffee.

RECIPE - HOJICHA SYRUP

Ingredients:
- LILIKU TEA Hojicha Powder: 10g (0.4oz)
- Sugar : 55g (1.9oz)
- Water: 50ml (1.7 fl. oz)
Directions:
- In a small saucepan, add hojicha powder.
* NOT TURN ON THE HEAT YET HERE. - Add Sugar and mix well
- Add water and turn on the heat.
- Keep mixing hojicha powder and water until there are completely dissolved.
