About Shizuoka Enchanted

This sencha goes through a process called withering. Usually, sencha is steamed immediately after harvesting to halt the action of oxidizing enzymes. On the other hand, withered sencha is aged for a few hours or overnight after harvesting to undergo a process of very light fermentation. This process is called withering, and it is what gives the tea its unique flowery aroma. Shizuoka Enchanted is made by withering the fragrant tea leaves of Shizuoka Prefecture, having the aroma of fresh green leaves with an enchanting floral scent.
